This & That

Friends, I have had zero motivation to sit down and write lately. Which I'm not counting as a bad thing, just a phase. I haven't neglected my blog reading, only writing :)

We have had a beautiful week here in SC with killer sunrises and sunsets. I'm planning on doing a ton of yard work this weekend, and I actually can't wait. Ha! The second the weather gets warm, I have this crazy itch to get the yard in pristine shape. Oh, I just really love Spring. Josh and I are both stoked for daylight saving time this weekend, we crave extra sunlight during the week so we can get out to the park with Murphy at the end of the work day.

Here's what we've been up to recently:

I tried a new recipe last night that was a hit at the dinner table, incredibly easy to make and will certainly be jumping in to our routine. Just in time too, this dish is so light and perfect for Spring into Summer. I'm dreaming of dining on this dish on our soon-to-be-extended deck with a glass of pinot grigio! I did all of the above last night, minus sitting on the deck ;)

I added two things that were not called for in the recipe, which were mushrooms and a splash of wine. Perfect. If you're a pasta person, you'll love this.

Shrimp, fresh tomatoes, and spinach with fettuccine pasta in garlic butter sauce. So refreshing, spicy, and Italian!:

Next on my list to try is this cajun shrimp with garlic parmesan and cream sauce, I have a hunch Josh will really like this one.

We've made it a habit, probably since the beginning of the year, to get out to the hiking trail by our house at least once, if not twice, a weekend. We've been logging upwards of 4 miles each time we go. We're lucky to have a beautiful trail to walk that winds through marshland and out next to the river. It's also not very populated, which we love.

Also, we've been doing some research on a dog trailer for Murphy, and I am in tears from laughing every time I look at pictures of dogs riding in them. We're hoping to get one in the near future so that we can hook it to our bikes and turn Murphy on our rides. Most of the trailers also double as strollers, and as crazy as this sounds, we actually could get good use of out a stroller in the summer. We had a scary incident last summer where Murph collapsed on us while we were out walking. It gets so hot here in the Summer months, that if we avoided the heat all the time, Murph would never make it to the park. A stroller could help us when he has reached his maximum walking time, but Josh and I aren't quite ready to call it quits yet. And if you are laughing at how hysterical it will be to see this 75 lb dog riding in a stroller, join the club ;) Who knows if we will actually bite the bullet on this, but I truly would love to take that buddy on bike rides.

We recently celebrated the gender reveal of our friends Erica and Nathan's babe...it's a boy! We're definitely entering the stage of life where every time we turn around, somebody is telling us they are pregnant. While Josh and I aren't ready for kids right now, we are over the moon for our friends to be adding to their families and we can't wait to love on the new additions when they arrive!

In the next few weeks we're looking forward to inching closer to having our deck re-do finished, The Masters, continuing to talk through a potential kitchen re-do later this year, and of course enjoying every bit of time we can get outside in this beautiful weather.

Hoping y'all have a great weekend!
